Pasta Matriciana

Servings: 4 Adults


  • 3 or 4 Rashers of Bacon finely chopped
  • 1 large organic brown onion diced
  • 2 cans of organic peeled tomatoes
  • 1/2 teaspoon of chilli flakes or a small fresh chilli
  • Good Organic Olive oil
  • Pasta
  • Parmesan to serve



  1. Heat a tablespoon or so of Olive oil in a large saucepan
  2. Add bacon and onion and cook on medium heat until the onion is transparent and bacon crispy, keep stirring so onion and bacon do not burn. Add chilli and continue to stir for a minute or so.
  3. Add the canned tomatoes, stir and bring to the boil.
  4. Reduce heat to low and continue to simmer for 35 – 45 minutes until the sauce has reduced.
  5. Cook pasta in boiling salted water, drain and spoon sauce over the top.
  6. Add Parmesan and Pepper and salt if required.
